Chicken in Lemon sauce

There are many variations for this recipe, but this one is my favourite. The lemon sauce taste is very authentic, especially served with steamed rice.

This dish is on top of my favourite list! Do try! I bet you will love the taste....

You will need, Ingredients:

• 500g Chicken breast

• 3 tbsp Lemon juice

• Salt to taste
• 6 tbsp Cornstarch
• 2 small capsicum
• 1 small yellow bell pepper
• 2 tbsp Oil + more for deep fry
• 1/2 tsp white pepper powder
• 1/2 tsp Ajinomoto
• 3 tbsp Sugar
• 1 star anise
• 2 tsp Lemon rind (grated)
• 2-3 cups chicken stock

Step 1:

Wash and drain chicken. Marinate chicken in 2 tbsp lemon juice and salt for 1 hour at least.

Step 2:

Cut capsicum and bell pepper into 1 inch sized pieces.

Heat sufficient oil in a wok, dip marinated chicken breast in cornstarch and deep fry for 3 to 4 minutes till crisp and light golden brown. Drain onto an absorbent paper.

Step 3:

Heat 2 tbsp oil in a pan, add capsicum and bell pepper and stir fry briefly. Add white pepper powder, ajinomoto, sugar, salt to taste, star anise, lemon rind, chicken stock and bring to a boil. Use stock as desired.

Stir in blended cornstarch and cook on medium heat till sauce starts to thicken.

Add fried chicken in the sauce, reduce heat and simmer for couple of minutes. Stir in remaining lemon juice and serve hot.

It tastes best with steamed rice. Enjoy!
