Baked Custard


Try making this Custard, its easy to make and incredibly filling. It tastes extremely delicious, especially if you make with good eggs and cream. 


You will need, Ingredients:

• 475 ml fresh cream or milk or a mixture 
• 1/2 tsp ground cinnamon 
• 1/2 tsp ground cardamon/nutmeg
•  2 large eggs
•  2 eggs yolk
•  pinch Salt
•  100 grams sugar 


Note: You can substitute 1 tsp vanilla extract for the ground cinnamon and cardamon/nutmeg. Also if you like desserts too sweet, you can use more sugar as desirable.


Step 1:

Put the cream/milk, the cinnamon and the half the cardamon/nutmeg in a small saucepan over medium heat. Cook just until it begins to steam, 3 to 5 mins.




Step 2: 

Use a whisk or electric whisk for beating eggs with salt and sugar until pale yellow and fairly thick. Heat oven to 150'C and start heating 500 ml of water to boil separately.




Step 3: 

Gradually add the cream to egg mixture, stirring constantly. Pour the mixture into an ovenproof dish or 4 to 6 ounce custard cups and sprinkle with remaining ground cardamon/nutmeg. 

Put the dish or cups in a baking pan and pour the hot water into the pan to within about 2.5 cm of the top of the bowls or cups to steam the oven, it maintains the moisture level of custard.

Bake until the mixture is not quite set, it should wobble just a little in the middle--about 45 minutes if you are baking in a dish or 30 minutes for the cups. 


Note: cream sets faster than the milk. Use your judgement 


Once it's done, don't rush to the oven to remove the dish immediately. Remember it's very hot, wait for 10 to 15 mins and carefully take your dish out wearing oven gloves.

It's ready! Serve warm at room temperature or cold within a day. Also you can use dry fruits and saffron, no limitation for dry fruits lovers!!! Some bad habits are yummy!!
